Welcome to 2005 and the first edition of our monthly newsletter. With the New Year many people start thinking about resolutions. One of the most popular and worthwhile resolution is that of making this the year to achieve a healthier lifestyle. Whether you are a strict and devoted follower of Norman Walker’s “Natural Diet” or if you are just getting started and only using your Norwalk Juicer to “supplement” your diet, we hope to offer you useful tips and information. The goal of the Norwalk News is to provide a special place on our website to share information about conventions, discuss the benefits of different foods, and present new and helpful ideas for using your Norwalk Juicer.

We have decided that since our first newsletter is coming out at the first of a new year we will focus on the basic carrot, Norman Walker’s base for most of his juices. The following excerpt is from Norman Walker’s book: “Natural Weight Control”.
“Raw carrot juice has the richest source of vitamin A, which the body can quickly assimilate. It contains also an ample supply of vitamins B,C,D,E, and K. Raw carrot juice is a natural solvent for ulcerous and cancerous conditions. It’s a resistant to infections, doing its most efficient work in conjunction with the adrenal glands. It helps prevent infections of the eyes and throat as well as the tonsils and sinuses and the respiratory organs generally. It also protects the nervous systems, and is unequalled for increasing body tone and vigor.”
Wow! Knowing that carrot juice can do all that why aren’t you drinking a glass right now? Carrot juice is simple to make and tastes great on the Norwalk.
The first recipe listed follows Norman Walker’s Natural Diet, while the second is a healthier alternative to regular cookies.
When making carrot juice, or any of the recipes here, remember that carrot peelings are great to add to your compost pile to help “feed” your garden.
| Norwalk Carrot Salad |
| 3 large organic carrots |
| 1 Red Delicious apple |
| ¼ cup Thompson seedless raisins |
| ¼ cup chopped walnuts |
| ¼ cup cottage cheese |
| Honey |
Peel the carrots and apple then run through the Norwalk juicer with the grid of your preference. I like the largest grid myself, for roughage. Next add the last three ingredients and mix. Sprinkle with a teaspoon or more of honey to taste.

| Carrot Drop Cookies |
| ½ cup vegetable oil | 1 cup whole wheat (ground into flour using the Norwalk) |
| 2 teaspoons vanilla | ¾ cup white flour |
| ½ cup raw honey | 1 teaspoon baking soda |
| ½ cup molasses | 1 Tablespoon cinnamon |
| 2 eggs | ½ Tablespoon nutmeg |
| 1 cup triturated carrot pulp | ½ teaspoon ginger |
| ¼ cup wheat germ |
If spices can be found in their whole form they should be used as they will provide the best flavor. Simply grind them up on the Norwalk using the pastry grid.
Preheat oven to 350. Combine the first six ingredients and mix well. Combine dry ingredients, mix well then combine with wet ingredients until blended. Drop on greased cookie sheet and bake at 350 for 10 minutes
